Located in the south-central part of Turkey, the Province of Kahramanmaras has the best weather conditions to grow this kind of pepper. Translated as 'silk' into English, this variety of crushed red pepper is called 'ipek', meaning all seeds are removed and they are not included in any way. It is sun-dried and lightly salted and oiled with olive oil for preservation. Maras pepper is deliciously flavoursome with a fruity aroma and earthy taste. It also has a medium heat. Maras chile pepper is a registered trademark of Kahramanmaras Province.
